I'm sure you've heard of Hungry Girl, right? If not, you definitely need to check out her recipes online or one of her many cookbooks. She also offers a daily newsletter with all kinds of healthy eating tips, recipes and more.

I stumbled across the recipe awhile back and made it several times when I was single but never for Paul, and I have no clue why. We both love chips and salsa.

Since I've been shopping, cooking and eating at home as much as possible since late December, I decided it was time to start making more snack foods too.

Here's a great little snack that's also low in Weight Watchers points.

Football Widow Shrimp Stir-Fry

This is partly in jest. My husband is a huge Eagles fan and normally hits Table 13 every Sunday to catch the game. Lately the Eagles games have been coming on at 4 or 4:30 so he's never home in time to have dinner with me. Much to his dismay, I'm not a fan of sports, really at all. If it's on in the background, I'll glance from time to time. Unlike most husbands, he is completely understanding and doesn't make me watch football games with him. What does this equal? For him, time to hang with his buddies. And for me, time to watch whatever I want on tv!

Tonight's dinner for me was super quick and super easy to make. You could increase this recipe for the appropriate number of people, but the recipe as you see below is ideal for one person. And great for a quick and fresh dinner after a long day at work!

Peanut Butter Temptations

This recipe was given to me by a co-worker. I mentioned that I made brownies stuffed with Reese Cups and she insisted I try these. They are sooo good, it's amazing. The original recipe came from Southern Living Magazine. I haven't been able to find the original recipe online, but I found plenty of variations.

Salted Double Chocolate Cookies

Wow, two of my favorite things in one recipe? Sea salt and chocolate. Yum!
