This is partly in jest. My husband is a huge Eagles fan and normally hits Table 13 every Sunday to catch the game. Lately the Eagles games have been coming on at 4 or 4:30 so he's never home in time to have dinner with me. Much to his dismay, I'm not a fan of sports, really at all. If it's on in the background, I'll glance from time to time. Unlike most husbands, he is completely understanding and doesn't make me watch football games with him. What does this equal? For him, time to hang with his buddies. And for me, time to watch whatever I want on tv!
Tonight's dinner for me was super quick and super easy to make. You could increase this recipe for the appropriate number of people, but the recipe as you see below is ideal for one person. And great for a quick and fresh dinner after a long day at work!
Prep Time - 5-10 minutes
Cooking Time - 5-10 minutes
1/2 cup water
1 cup uncooked brown rice
1 tablespoon minced garlic
1 tablespoon chopped shallot
1 tsp olive oil
1 3/4 cup frozen stir fry veggies (any variety)
1 scallion chopped
3 oz frozen pre-cooked shrimp
1 tbs soy sauce
1 tsp chili sauce (you can add more, but it's very hot so start with a little and add from there)
salt
pepper
Defrost shrimp in bowl of water. Pat dry and remove tails. Set aside.
Cook the brown rice according to the package. For the my brown rice, I boiled 1/2 cup water, added the rice and simmered (cooked on lowest setting) for 5 minutes. Remove rice from heat and let stand for 5 minutes.
In a wok or large skillet, spray pam and add garlic, shallots, salt and pepper. Cook until garlic is slightly brown.
Add olive oil and allow to heat. Add stir fry veggies. Add scallion. Add chili sauce. Allow to cook for 5-10 minutes depending on how well done you like your veggies.
While this is cooking, mix shrimp and soy sauce. With 3 minutes or so left, add shrimp mixture to stir fry.
Remove from heat and top with green portion of scallion (the picture below shows a bit of noodles - that was part of the stir fry mix I had. Also, I forgot to add the green scallion/onion before taking the picture).
Super easy, super fresh and super yummy!
